Galoti Kababs

Ingredients vegetarian 4 servings


    • 400 grams kheema
    • 1 medium sized onion (chopped)
    • Salt to taste
    • 1½ tsp chilli powder
    • 1 tsp garam masala
    • a pinch saffron
    • Oil- for frying
    • 5 grams coriander leaves (chopped)
    • 25 grams butter (optional)
    • 20 grams roasted chick peas
    • 100 grams ghee

    Directions

    1. Mix all the ingredients with the kheema and make a mound.
    2. Place it in a tray, make a hole in the centre and pour ghee in it.
    3. Take a piece of burning charcoal and put it in the ghee.
    4. Cover immediately so that smoke flavours the meat.
    5. Keep aside for 3 minutes.
    6. Remove the charcoal and make kababs.
    7. Fry the kababs till golden.
    8. Sprinle some lime on them.
    9. Serve hot with onion rings and any dip of your choice.

    This was good, the only thing I did differently was to place a piece of foil in the centre of the meat mound and put a burning coal in it and pour some ghee over it and cover. After it burns out, the meat has a nice smoky smell and remains the same when cooking it. Pretty neat. Thanks.
