Bohri Chicken

a combination of curd n almond

learned this recipe from a bohri cook n always remain a hit dish when ever i make for a party at home

Ingredients non vegetarian 6 servings


    • 1.5 kg chicken
    • 1 tbsp ginger/garlic/green chilli paste
    • 1 tsp vinegar
    • 1 cup almond or 40 almonds(ground)
    • 3 tbs curd
    • 4 tbsp ketchup
    • 10-12 curry leaves chopped
    • 3-4 cinnamon sticks
    • 8-10 black pepper
    • 4-5 garlic chopped
    • 1 tsp red chilli powder
    • 1 cup chopped coriander
    • 1/2 cup chopped green onion
    • salt as per taste
    • 3-4 tbs oil
    • a piece of coal for smoke

    Directions

    1. Boil chicken in 2 cups water, ginger/garlic/green chilli paste and vinegar.Remove from stove when chicken is tender and 1 cup stock is still there in the pan.
    2. Mix ground almond,curd,ketchup, chopped curry leaves,cinnamon sticks,black pepper,red chilli,salt in a bowl.
    3. Heat oil in a pan.Add chopped garlic stir for 30 seconds .Pour mixture of almond and curd and stir for 2-3 minutes on medium heat.Add chicken stock and stir for 1 min.Add chicken pieces and let it cook for 3-4 minutes
    4. Heat coal till it becomes red. Put a small bowl in your pan and place coal in it. Add 1 tsp oil on heated coal and as soon as smoke starts coming out from it, cover the pan tightly with a lid for 10-15 minutes
    5. Remove coal from pan.
    6. Dish out chicken and decorate with corriander and green onion
    7. Serve hot with roghni nan or home made paratha

    Thanks for a great recipe. Instead of a bowl, I used a foil dish and placed the burning coal and poured a tbls of ghee and covered the pan. Please send me some more chicken/mutton recipes my ID; jmc2805@gmail.com Thanks.

    Hi Farida, Thank you for this excellent recipe. The dish turned out so wonderful with the smoked flavor, and my husband loved it ! Do you have any mutton recipes?
