Carrot Methi Paratha

A delicious combination of 2 healthy veggies

Ingredients vegetarian 2 servings


    • 1 cup grated carrots (you may also finely process carrot in a processor)
    • 2-3 tbsp kasoori methi (you can also add fresh methi leaves)
    • Salt to taste
    • 1 tsp each of red chilli, dhaniya, amchoor, garam masala powder
    • kneaded wheat dough for parathas
    • oil for frying

     

    Directions

    1. Take grated carrots in a bowl & mix it well with kasoori/ fresh methi & all dry spices & keep aside for sometime
    2. Once done add a generous amount of this filling into a ball of the kneaded flour & seal it
    3. Roll out a round paratha applying dry wheat flour
    4. Heat a pan & cook the paratha on both sides smearing some oil on each side till the paratha is cooked
    5. Serve with butter, pickle or raita.

    A nice combination is carrot and radish. Grate the radish add a dash of salt, squeeze out the water and add to the carrots and other spices for filling.
