There are number of ways Garam Masala has been prepared in different regions of India. There is no way to tell what is most authentic and what is not. In fact all of them are authentic for their unique flavors that they bring.

3 pieces Cinnamon, 5" sticks
1 cup Cardamom
½ cup Cumin Seeds
½ cup Black Pepper
½ cup Cloves
½ cup Coriander Seeds, seeds
This is a recipe for preparing a basic Garam Masala at home.
You can prepare this in smaller portions and always have fresh masala for your recipes.
Fresh masala always yields a better flavor than stored ones.
Dry the ingredients in an oven.
Do not let them turn brown.
Remove the seeds from the cardamom pods.
Pound cinnamon sticks into smaller pieces.
Combine ingredients until they are well mixed and blend at
high speed for 2-3 minutes until completely pulverized.
