Mutton Biryani

This has a special flavour which you will get in Kolkata

This particular gives a very good aroma of a Biryani. Might look a lengthy recipe but its worth a try.. :)

Ingredients non vegetarian 4 servings


    • 2 cups of Basmati Rice
    • 1/2 kg mutton
    • 2 medium red onion sliced
    • 2 tsp Ginger-Garlic-green chilli paste
    • 1/2 tsp Red Chilli Powder
    • 4 tsp Ghee (for the original taste) or oil can also be used
    • 1/2 tsp kewra or mitha antar
    FOR MUTTON
    • 1 tsp Whole Black Pepper
    • Salt to taste
    FOR THE RICE MARINATE
    • 5 green cardamom
    • 2 Black cardamom
    • 1 inch cinnamon
    • 1 star Anise
    • 2 mace
    • 1 nutmeg
    • 1/2 tsp Sahi jeera
    • 1/2 tsp Whole White pepper (Shah Morich)
    • 1/2 tsp clove
    • 1/2 tsp Turmeric

    Directions

    1. Wash the rice, strain excess water and marinate with all the ingredients for the rice marinate and 1tsp of ghee. Mix it and keep it for 1-2 hrs
    2. Pressure cook the mutton with water salt and whole black pepper to 1 whistle
    3. In a heavy bottomed pan put 1 tsp ghee fry the onion till golden brown, keep aside half of the fried onion
    4. In the pan with remaining half fried onion add one tsp of ghee, ginger-garlic-green chilli paste, red chilli powder, fry it add the cook mutton(strained) in it, fry till the ghee separates. Keep aside the stock.
    5. Remove the mutton from the pan.
    6. Now to the pan add the marinated rice and the mutton stock, if the stock is less for the rice to cook, water can be added. Cook the Rice Till done.
    7. Mix the cooked rice and the cooked mutton, 1 tsp Ghee and the kewra, mix well. Garnish with the Fried Onions
    8. And its ready to be served with Raita

    rice should be fried with some whole garam masala like cardemum cloves sahijeera bayleaf etc before cooking it
