Poha Mix

Ingredients vegetarian 4 servings


    • 3 cups beaten rice / poha, the extremely thin ones
    • 1.5 cups fresh grated coconut
    • 1.5 cups finely chopped onions
    • 1/2 cups groundnut (Roasted & skins taken out)
    • 1 tsp Cumin Seeds
    • 1/2 tsp Mustard Seeds (small seeds)
    • 1/4 tsp Coriander Seeds
    • 1/2 tsp Aniseed (Saunf)
    • 2 Whole Red Chilli
    • Few Curry leaves
    • 1 tsp salt or as per taste
    • 1/2 teaspoon Sugar
    • 2/3 tablespoon Ghee

    Directions

    1. Place the beaten rice in a large vessel & top it with grated coconut
    2. Heat ghee in a deep frying pan
    3. Keeping flame in high slowly add all the whole spices one by one in series ... Cumming seed, Mustard Seed, Coriander Seed, Aniseed, Red Chilli, Curry Leaves, Salt & Sugar.
    4. Add the Roasted groundnut & chopped onion & put off the flame immediately. Mix it lightly but take care that the onions should not be fried at all.
    5. Let this mixture cool a bit & then pour the whole misture into the vessel of beaten rice & coconut.
    6. Mix it hard & nicely by hand ... Poha Mixture is ready.
    7. Distribute it in bowls & serve. Garnishing with green coriander leaves if you wish.
    8. It goes well with beaten yoghurt
