Idly cooked in fresh jack leaf baskets

A traditional recipe from Andhra prepared as naivedya for Ganesh Chaturthi

Ingredients


  • The regular idly batter
  • Equal sized fresh jackfruit leaves-4 per basket
  • Thin tooth picks


Directions

  • Wash and wipe the jackfruit leaves
  • Attach the tips of 2 leaves first using a toothpick
  • Now join the other 2 on opposite sides. Now they look “+”shaped.
  • Gather the corresponding sides upwards and secure with toothpicks taking care that no space is seen between leaves.
  • Join all the sides in the same manner.
  • Drop the idly batter carefully up to half the basket to allow for uniform cooking
  • Place all the baskets in a thali and pressure-cook like idly but for a longer time.
  • To check cooking prick with a knife and a clean knife shows it’s done.
  • Serve hot with coconut chutney.

hi lakshmi i am a mangalorean konkana even we too prepare this idly(kotto) but my mom adds a bit of jeera before u take the idly batter from the grinder , this is because jack fruit leaves are considered to be gasteric . But with jeera it tastes more tasty.Try it out next time.
