Batata Wada

Its my favourite reciepe. I enjoy eating it with green chutney or with garlic chutney ( dry)and pav.

Ingredients vegetarian 4 servings

  • 2 nos. Potato
  • 2 tbsps. Cilantro, finely chopped
  • 5 nos. Curry Leaf
  • 2 nos. Green Chilies
  • 1 piece Ginger, 1 inch
  • 1 tsp Garlic, paste
  • ½ tsp Mustard seeds (black)
  • ½ tsp Black gram (split)
  • ¼ tsp Turmeric Powder
  • 1 tsp Salt

for the batter:
1 cup gram flour water 1/2 tsp salt a pinch of soda Oil for frying and tempering

Directions

  1. Boil potatoes and mash them.
  2. Grind ginger and green chilies into a paste.
  3. Add cilantro, green chillies and ginger paste, salt, turmeric powder in the mashed potaoes.
  4. In a vessel take 1 tbsp oil, put mustard seeds, urad dal in it.
  5. After it splutters put the curry leaves and garlic paste in it. Stir till garlic becomes light brown in colour.
  6. Pour it in the potato mixture and mix well. Make small round balls and keep aside.
  7. Take gram flour, salt, soda and water. Mix well, to get a fine consistency.
  8. Dip the balls in the batter and deep fry till golden brown.

The receipe is fantastic and tastes great! I added one more item to the mixture and that was juice of one lemon to add a citrus flavour. Of course you can increase or decrease the lemon juice as per your taste.

your receipe is perfect. could you please give the receipe for the red dry chutney that is served with the vada pau in mumbai which is probably the lasun chutney. thanks.
