Mashed Pumpkin dish

A healthy nutritious tasty food which is easy to cook and can be eatable either with rice or chapatti

Ingredients vegetarian 2 servings


    • ½ kg pumpkin
    • 2-3 tbsp ghee
    • 1 tsp full jeera seeds
    • 1 dried red chili (sukha mirch)
    • ½ tsp asafoetida powder
    • 2-3 bay leaves
    • 1-2 pieces onion (small to medium)
    • 1-2 green chili cut longitudinally ( according to taste)
    • 2-3 tbsp sugar
    • ½ tsp turmeric powder 
    • Salt to taste
    • 10 gm chana ( soaked in water over night)
    • 1 tsp jeera powder
    • 1 tsp garam masala powder
    • 1 tsp lemon juice

    Directions

    1. Soak chana overnight in water
    2. Cut the peeled off pumpkin into small pieces and heat in microwave for 3-4 minutes, alternatively pressure cook the pieces till 3-4 whistles
    3. In a pan heat 1 table spoon ghee and add jeera seeds, asafoetida powder, dried red chili, bay leaves in it.
    4. Cook  them for 1 minute
    5. Now add chopped onions into it and fry till reddish brown colour
    6. Add baked/boiled pumpkin pieces to it and pour 1.5 cups pf water
    7. Add sugar, turmeric powder, green chili and salt to taste
    8. Add soaked chana and stir all the ingrdients properly and cover with a lead
    9. After 2-3 minutes open the lead and mash the pumpkin with back of a spoon (keep stirring)
    10. Wait till water dries then add jeera powder and garam masala powder and stir properly for 1 minute
    11. Take it off from the oven and add rest of the ghee to it and mix well
    12. Add lemon juice before serving
    13. Serve hot along with chapatti or rice as sukha sabji

    You can use orange/yellow pumpkin as that is sweeter than the green pumpkin.

    Please tell me which pumpkin to use .. is it green or yellow ..
