Low fat baked custard

This recipe was given to me by my wife who takes good care of her health. Hope you all like it like I do.

Ingredients


  • 2 .5 c light warm low fat milk.
  • 6 egg yolks + 2 eggs
  • 3/4 c light brown sugar
For caramel:
  • 1 tsbp margarine
  • 3 tbsp light brown sugar

Directions

  1. Beat sugar and eggs together then add in the milk and beat for another 3 min and set aside.
  2. Heat sugar and caramelise it with the butter.
  3. pour the caramel in your baking dish and allow to cool.
  4. Pour over it (slowly) the milk mixture and cover it wit a foil.
  5.  On a baking tray pour around 1 c water and and bake the covered pudding for approx 45min -1 hour in a 180-deg oven.( if the water decreases add water on your baking tray and continue to bake).
  6. Remove from heat and let it cool.
  7. Put in the refrigerator to allow the pudding to set nicely.
  8. Loosen the sides and put the pudding dish on a larger plate and turn it up side down. 
  9. Decorate with whipped cream and serve.

Made it 4 a family member by opting it with artificial cooking sugar as she has diabetes and it turned out excellent. Thank you Khuserv once again.

Seems like a nice option khuserv, will try it out. Just a query will it not turn brown if using brown sugar or do we need to use light brown sugar? Thank you.

Well caramel custard is my mothers favourite dessert I hope she likes the low fat version though? I will give this one a try. Thank you.
