Fried Egg-Potato Masala

Ingredients non vegetarian 4 servings


    • 6 hard boiled eggs (cut into halves)
    • potatoes (peeled and cut into quarters)
    • 1 finely chopped onion
    • 1 finely chopped tomato
    • 1" ginger
    • 6 cloves of garlic
    • 2 tsp red chilli powder
    • 1 stick cinnamon
    • 2 bay leaves
    • 1/2 tsp black pepper (freshly ground)
    • 2 cloves
    • 2 cardamom
    • 1 tbsp refined oil
    • salt to taste
    • a bunch of chopped coriander leaves
    • 1 cup of boiled water
    • curry leaves fried in coconut oil.

    Directions

    1. Prepare ginger-garlic paste.
    2. Heat oil in a pan and fry potatoes till golden brown and keep aside.
    3. Then put boiled eggs and fry and keep aside.
    4. Then fry cinnamons,cloves,cardamoms and ground pepper in the same oil.
    5. Add ginger-garlic paste , onions, tomatoes and fry till golden brown.
    6. Add chilli powder , salt and saute for 5 mins.
    7. Add water and cook till the gravy is thick.
    8. Then add fried potatoes and fried eggs.
    9. Remove from heat and garnish with  chopped coriander leaves and fried curry leaves in cocunut oil.
    10. Serve hot.

    Add little salt and chilli powder (little) when you fry egg- potatao first.
