Dry roast and grind sesame, groundnut, coconut powder, jeera powder and dhania powder.
Fry onions till it turns transparent and pink and grind.
Wash brinjal, make 4 slits in the brinjal without removing the stem.
Shallow fry brinjal. keep aside.
In a vessel heat oil add zeera , mustad seeds ,kalonji seeds methi. now add 1tbsp ginger garlic paste, turmeric, red chilli powder. mix well.
now add the ground masala and onions . n keep stirring for 5-7 min.
add water 1 glass n cook . let it boil for 5 min
now add the brinjal n tamarind pulp(can also add water in tamarind pulp) n cover and cook well on slow flame for 10 min. add water according to the consistency required.let it boil for another 3-4 min n remove from fire.
