Recipe by Anamika Thokal of Pune, IN

Ingredients non vegetarian 8 servings

    • 250 g of Maida
    • 4 eggs
    • 2 cups of sugar (finely powdered)
    • 2 tsp of baking powder
    • 2 1/2 tsp of Mixed Fruit Essence or any flavor that you prefer
    • 1/4 tsp of salt
    • 1 or 2 cups of milk for mixture.
    • Vegetable Oil for frying your doughnuts.
    • Doughnut making instrument or one 3cm diameter jar lid and other 1cm diameter bottle cap for cutting them.

    Directions

    1. Take a large bowl and break 4 eggs in it.
    2. Add Essence to it and mix. If you mix this batter in a mixture, it will be mixed more properly.
    3. Add powdered sugar to this mixture again in a mixer grinder for a minute. After this is done, you will notice a soft paste.
    4. Mix this paste in a separate bowl with the maida and added baking powder. Remember, that while you are mixing the end result should be of a dough that you usually prepare for Chapatis.
    5. If the mixture is too hard, milk little by little to make it soft.
    6. Now, make four large portions of the the dough you just made.
    7. Prepare a deep frying pan with oil and heat it.
    8. Take one dough portion and prepare a large thick chapati/roti out of it. Remember, it should not be very thin or very thick.
    9. Firstly, use the 3cm jar lid to cut the outer portion of the doughnut and then place the smaller on in the midpoint of your large cut peice and make a small hole in between.
    10. You will be able to make 5-7 doughnuts in each large chapati/roti you make.

    For Frying:

    1. Make sure that the oil in the pan is heated well and turn your gas flame low.
    2. Now add these cut pieces of doughnut for frying.
    3. You will notice that the doughnuts begin to swell and expand.
    4. Fry them till they are golden brown and remove them from the frying pan.

These can be served hot or cold and can even be stored for 15-20 days.

You can also dust these doughnuts with icing or castor sugar. Alternatively, cut a doughnut into half from the sides to have two doughnut circles, apply some cream mixed with icing sugar or chocolate syrup and join the two circles, sprinle the top with icing sugar.
