Chicken a la mexican

An easy mexican dish to prepare

Ingredients non vegetarian 2 servings


    • 1 kg Chicken, boneless
    • 1/2 cup Olives
    • 1/2 cup Vinegar
    • 3/4 cup Tomato ketchup
    • 6 Basil [tulsi] leaves
    • 2 Bay leaves
    • 2 med. Onions, chopped
    • 1 cup boiled Corn
    • 2 Capsicums, sliced
    • 1 tsp. crushed Garlic
    • 1 tsp. red Paprika
    • 1/2 tsp. Black pepper
    • salt to taste

    Directions

    1. Cut chicken into bite sized pieces. Heat oil. Fry the chicken pieces to golden brown. remove and keep aside.
    2. To the remaining oil, add garlic and onions and fry till golden brown. add vinegar, tomato ketchup, seasonings and herbs. bring to a boil.
    3. Add the chicken pieces and corn.
    4. Cover and cook over low heat till the chicken is tender and the sauce is thick.
    5. Add the sliced capsicums and cook further for 5 to 7 minutes.
    6. Serve with steamed rice.

    You have not mentioned how much oil is required in the list of ingredients. Also, what about the half cup of olives?
