Hi Lydia!.2 Cups maida flour is more than 300gms-I shud say.1 cup coconut milk is 200ml.U can include the baking powder (1/2 tsp or 3/4 tsp)to puff this paniyaram.The dough shud be thick and soft- like for parathas(if needed add 1 or 2 tbsp maida flour more).This sweet will be best done with kuzhipaniyaram kadai (greasing each shallow-hole with 1 tsp oil) or deep-fry this with 350 ml oil in a shallow kadai(so that the maida balls when added to the oil,they shud not touch the bottom of the kadai.If done with less oil,u must turn the maida balls once (allow it get fried for 25 secs) ie.15 secs after adding it to the oil so that the otherside shud not stick to the bottom (ie. all sides fried a little after being put into the oil by turning the balls quickly)and then do the normal deep-frying.The dough shud be made into balls(little hollow inside) like u do for paratha - stuffing the dough in-between fingers.Hope this helps u.

Hi christy, I tried your sweet paniyaram recipe, sorry it did not come out well. The dough was sticky and not stiff to make balls as you mentioned. I tried shallow frying but it was hard. So I deep fried the rest but still it turned out hard. should I mix some baking powder to the dough? I am sorry, but can you tell me what went wrong. I did exactly as you mentioned. The picture looks really yummy! Thanks.
