Moongphali Aaloo

Potatoes with a subtle flavour

My grandma's age old secret! But it's so good and easy to make that I felt obligated to share:-)

Ingredients vegetarian 4 servings


    • 4 large Potatoes ( cut into 8 pieces each)
    • 200 gms Raw Peanuts (with skin)
    • 2 tsp Cumin
    • 2 tsp Ghee
    • 4-5 Green chillies (slit)
    • 2 tsp coriander leaves ( chopped)
    • 1 Lime
    • 1 cup Coconut (grated)
    • Salt - to taste

    Directions

    1. In a non-stick pan, heat the ghee.
    2. Add the cumin and when it sputters, add the slit green chillies and cook for 15 seconds.
    3. Add the potatoes, salt and the raw peanuts (with the skin)and cover the pan and cook on a low flame till the peanuts and potatoes are almost done. (stirring once in a while to ensure that they don't burn)
    4. Add in the grated coconut and coriander leaves and cook for a few minutes till the coconut leaves some milk
    5. Add in the juice of one lime and stir.
    6. Check the seasoning and serve hot with either puris or soft chapatis.
