Ingredients non vegetarian 20 servings


    • mangainji-200gm.
    • lemon-10.
    • salt-reqrd amt.
    • dry roasted mustard powder-1/4tsp.
    • asefoetida powder-1/2tsp.
    • redchilli powder-4 to5tsp.
    • dry roasted vendhayam powder-1/2tsp.
    • gingelly oil-125ml.
    • mustard seeds-1/2tsp.
    • curry leaves-1/2handful.
    • greenchillies-2.

    Directions

    • wash lemons&mangainji and rub the moisture.
    • peel the skin of mangainji.
    • cut lemon&mangainji into pieces.
    • add salt and keep this mixture in direct sunlight daily.
    • when lemon becomes soft and juicy,this is ready to make pickle.
    • add all masala powders and greenchillies to the above.
    • heat oil in a kadai,add mustard seeds and curry leaves.
    • add the lemon&mangoinji mixture to the above.
    • cook till raw smell goes out.
    • serve with all types of rice,idli and dosai.
    • mangainji is one of the vegetable available in tamil nadu.i use this in my previous recipe'chicken-mangoinji'recipe.
