Ingredients non vegetarian 4 servings


    For peppermint souffle
    • 150ml milk
    • 3-4tbsp fresh cream
    • 2 eggs seperated
    • 2-3 tsps gelatin
    • few drops of peppermint essence
    • drops of green food colouring
    • sugar as per requirement

    Directions

    1. seperate egg yolks and mix into milk and sugar.cook this mixture stirring continuosly to make a custard and until sugar dissolves.
    2. beat fresh cream with 2 tsps sugar and a few dros of peppermint essence and the food colour.beat until the cream is nice and frothy
    3. mix the cooked milk mix to this cream.
    4. dissolve gelatin and add to this mixture and blend well.
    5. make soft peaks of egg whites and fold into this and set in refrigerator.
    6. serve chilled with a topping of chocolate mousse/ chocolate scrappings.
