Methi sakkarpara

deep fried snack using fenugreek leaves and mix flours

Can be served as tea time snack.You can use only wheat flour if you don t want to add other flours.

Ingredients vegetarian 4 servings


    • 1 cup fenugreek leaves washed and finely chopped
    • 11/2 cup wheat flour
    • 1 tbsp gram flour
    • 1 tbsp rice flour
    • 1 tbsp bajri flour
    • 1 tbsp jowar flour
    • 3 tbsp oil + 1 tsp oil
    • 2 t.sp red chilly pwd
    • 1/4 tsp. turmeric pwd
    • 1 tsp. sugar 
    • 1 tbsp. sesame seeds
    • 1 tbsp. curd
    • salt to taste
    • oil for deep frying

    Directions

    1. Heat 1 t.sp. oil in a kadai, add fenugreek leaves.
    2. saute for 2 min.Add red chilly pwd + turmeric pwd + salt + sesame seeds + sugar and switch off the gas.Let it cool.
    3. Mix well all the flours and oil.
    4. Add fenugreek leaves and make semi firm dough.Add curd if required.
    5. Make 6 equal balls.
    6. Take a ball and roll into a thick roti.
    7. Heat oil on medium flame.
    8. Cut roti in diamond shape like sakkarpara with a pizza cutter.
    9. Deep fry till light brown.
    10. Once cool store in a airtight container.Can be kept for 10 days.
    11. If you want to reduce the bitterness reduce the quantity of methi leaves.
