Kuskus

Just like we serve Biryani the N African's traditional dish is Kuskus in weddings and esp Occasions. The traditional way is quite long but here is my version of a short way of making kuskus to our Indo-Pak viewers.

Ingredients non vegetarian 6 servings


    • 1 pack Kuskus ( 3 cups)
    • 2 1/4 c water
    • 1 1/2 tbsp butter.

    For Curry:

    • 1 chicken cut into 4 halves ( if ur vegetarian then omit)
    • 2 tbsp butter
    • 1/4 cup oil
    • 1 large onion cut into wedges*
    • 1 can tomato pulp*
    • 1 cup chopped coriander*
    • 1 1/2 tsp ginger /garlic paste*
    • 1 tsp turmeric*
    • 1 tsp red chilli powder(opt)
    • 1/2 tsp black pepper*
    • 3 whole slit hot green chili*
    • 2 cinnamon stick*
    • 1/4 tsp crushed saffron*
    • 3 cup vegetables= carrots, potatoes,squash,zucchini,turnips ( all cut into large cubes).
    • 1 can chick pea.
    • 3 cup water
    • 2 tsp salt or to ur taste

    Directions

    1. In a large pot heat butter and oil add onion and starred items fry for few min.
    2. Add chicken (if u r using it) and vegetables and toss fry for 5 min.
    3. Add the strained chickpeas.
    4. Pour the  water and simmer until all the vegetables are tender approx 20 min.Remove the g chilli and cinnamon sticks.
    5. Remove the chicken and shallow fry them till golden and set aside.
    6. For kuskus: Meanwhile bring 2 1/4c. Water and 1- 1/2 T butter and salt to boiling. Stir in couscous. Remove from heat, cover and let stand 10 minutes; fluff with fork. Arrange couscous in center of serving platter. Drizzle couscous with 3/4 c sauce. Spoon vegetables and fried chicken  atop couscous. Serve, passing remaining sauce separately.

    @Suhani I really would't know the Bengloi name 4 Kuskus as I am not very fluent in Bangla but it is something like "chailer Khudi " but made out off semolina (suji) but is much bigger then fine soji from which we make desserts. You can try looking for them in shops where you get fresh ata, dal & rice. I hope that helps . Cheers.

    Couscous is, cream-white coloured and polished Semolina or Rava of Mediterranian, African and Middle Eastern regions. The grains look similar to the grains of cream of wheat in size, but, more rounder in shape.

    ASAK Sadiya, It is actually called "Couscous" which is basically made out of semolina and coated with wheat. It is mostly found in middle eastern shops. and mostly eaten in Africa & middle east.To be honest I am really not aware of it's Indian name as I have always known it by this name and I have never seen any Indian recipe made out of it. Hope this helps.

    Hi shinchi, U can find kuskus in Arabian shops or malls, They come in packs and are ready to be made with borth , or water and a little butter. Cheers.

    YumMy Yummy. I remember having KUsKus when we went on a holiday from London to Tunis 2 years back. I will pass it to my mum and she can make it for us I am sure. Thank you and happy to see your posts once again.
