Dried fruit achar

This is a very tasty sweet and sour Achar stays for a whole year if left under the sun every month for a day or two in an air tight jars and no used or wet spoon is used while bring the Achars out.

Ingredients vegetarian 6 servings


    • 2 cup dried fruits( sour figs, prunes, raisins, apricot, dates & ..)
    • 4 cup vinegar
    • 1/4 cup oil
    • 1 tbsp mustard seeds
    • 1 tsp kalonji
    • 2 tbsp crushed red chilli
    • 2 tsp salt
    • 3/4 cup sugar
    • 3/4 cup ghor (Jaggery)
    • 1 tsp citric acid.

    Directions

    1. Wash & dry the fruits.
    2. Soak dried fruits of your choice in 1 c vinegar overnight.
    3. In the morning chop the large ones into 4 halves.
    4. Heat oil(mustard is preferable) and fry the mustard seeds, Kalonji, chilli falkes until they change colour.
    5. Add fruits and all the vinegars, salt, sugar and ghor and bring it to the boil.
    6. Lower the heat after 5 min and cook till mixture thickens (like thick syrup).
    7. Stir continuously  to prevent scorching.
    8. Remove from heat and cool completely then add citric acid and put them in air tight jars.
    9. Use when needed.
