Healthy soyabean salad

soyabean is very good for health.

This salad can be served with any meal.Those who are on diet can eat this as meal also.

Ingredients vegetarian 4 servings


    • 1 cup cooked soyabeans
    • 1 diced onion
    • 1 diced tomato
    • 1 diced capsicum
    • 1 tbsp coriander leaves, finely chopped
    • 1 tbsp mint leaves, finely chopped
    • 1 green chilly, finely chopped
    • 1/4 tsp freshly ground black paper pwd
    • 1 tsp. lemon juice
    • diced carrot, cabbage, sweet corn etc (optional)
    • Salt to taste

    Directions

    1. Soak soyabeans in enough water for atleast 8-10hrs.
    2. Drain water, add fresh water and pressure cook with 1\2 t.sp.salt for three whistles
    3. In a bowl mix all the ingrediants except soyabeans
    4. Drain water from soyabeans and allow it to cool
    5. Add soyabeans and mix gently
    6. Transfer the contents in a serving dish
    7. Garnish with a mint sprig

    Orange-Mint Salad--- This salad was inspired by one of my kids commenting that “oranges are so every day.” My mom remembers when oranges were a treat. I love oranges, so I wanted to make something a little different. I’m also enjoying using our abundant spearmint while it is still fresh from the garden. Thinly slice several spearmint leaves, to taste. Mix in some brown sugar, to taste. I used a bit too much for our tastes, about ½ T. Peel and chunk oranges. I used two California navels.
