Prawn Stew

A tasty blend of veggie and prawn cooked in cocunut milk

It becomes a tasty vegetarian delight, with your own choice of veggies, if you avoid the prawn

Ingredients vegetarian 4 servings


    • 1 cup de-veined medium sized prawns
    • 1 cup diced. red onion
    • ½ cup diced carrots
    • ½ cup diced potatoes
    • ½ cup diced mushroom
    • ½ cup broccoli crowns
    • ½ cup frozen peas
    • 1 inch piece ginger grated
    • 7-8 curry leaves
    • 4-5, slit and deseeded green chillies
    • 2 cups cocunut milk
    • 2 tbsp cocunut oil
    • 1 tsp jeera
    • Salt to taste

    Directions

    1. Heat the cocunut oil in a pan and splutter in the, jeera, currry leaves, and chillies
    2. Add the onions and the shredded ginger and saute till slifhtly pink
    3. On medium heat, Stir in the vegetables, one by one, starting with the potatoes.
    4. Stir in the prawns, and coat in well with the oil and other vegetables
    5. Cover and let it it all cook for 5-8 minutes
    6. When the vegetables are half done, add the cocunut milk and simmer for 10- 15 minutes
    7. Serve hot with aappam, dosa or roti
    8. if necessary you can thicken the gravy in the end with a tsp of corn flour dissolved in 1/4 cup of milk
