Tropicana Salad

Recipe by Khushboo Barmeda of Dar es Salaam, TZ

Ingredients vegetarian 2 servings


    • 1 Cucumber finely chopped
    • 1 Carrot grated
    • 1/2 cup boiled noodles
    • 5 Mushrooms (boiled and chopped)
    • 1 Capsicum finely chopped
    • 1/4 cup sweet corn
    • 1 potato boiled and chopped
    • 1/4 cup pineapple chopped
    • 1 egg boiled and cut into slices
    • 6 leaves of lettuce
    • 3 tbsp mayonnaise
    • salt and pepper to taste
    • 1 tsp thyme(optional) for garnishing

    Directions

    1. Mix well cucumber, carrot, boiled noodles, mushrooms, capsicum, sweet corn, boiled potato, pineapple, egg, mayonnaise, salt and pepper.
    2. Arrange lettuce leaves on the plate and pour (1) on it.
    3. sprinkle thyme for garnishing.
