Paneer Delight

a good side dish with naan, roti or paratha

Ingredients vegetarian 4 servings


    • 250 g paneer (cottage cheese) cubes
    • 2 tbsp butter
    • 1 tbsp fresh cream
    • 1 slice bread (toasted, crumbled)
    • 1 tsp chilli powder
    • 1/4 tsp turmeric powder
    • 4 tbsps refined oil
    • 1 large, 1 medium sized tomato (finely chopped)
    • 1 small capsicum (finely chopped)
    • 1/4 cup cabbage (finely chopped)
    • 1 tbsp coriander leaves (finely chopped)
    • 1/2 tsp coriander powder
    • 1/2 tsp sugar
    • 1 tbsp coconut (grated)
    • 10 pieces of cashew
    • 1 tbsp flour
    • 1 stalk curry leaves
    • 1/4 tsp garam masala powder
    • salt to taste

    Directions

    1. Fry the paneer cubes and keep aside.
    2. Grate 2 of the fried paneer cubes and keep separately.
    3. In oil fry 5 cashews and keep aside.
    4. Fry 1 large tomato (chopped), cabbage and the bread toast crumbles together till the cabbage is fairly cooked.
    5. Now grind the above mixture alongwith the 5 unfried cashews with minimum water. This is the ground paste.
    6. Heat oil in a wok or kadhai. Fry the curry leaves, capsicum and remaining tomato in it.
    7. Then add all the remaining spices and the ground paste to it.
    8. When it is cooked, add the flour (dissolved in 1 tbsp water).
    9. Add the fried paneer cubes and let cook for 2 mins.
    10. Then add salt and sugar and cook for some more time.
    11. Before removing from fire, add the fried cashews, butter and fresh cream. Mix well.
    12. Then remove from fire. Garnish with the grated paneer and coriander leaves and serve.

    I loved this combination of Paneer, Coconut, Almond. It gave a rich Sauce, gravy and excellent combination of North and south India Cuisine. Final touch of adding shredded paneer added good flavor. Thanks for sharing this recipe!
