Traditional Tomato Soup

This is one of those recipes handed down by generations

Ingredients vegetarian 4 servings

  • 1 lb Tomato, ripe
  • 2 tbsps. Sugar
  • 1 no. Bay leaves
  • 1 pinch Cinnamon, powder
  • 1 pinch Cloves, powder
  • ¼ tsp Red Chili Powder
  • ¼ pinch Cumin Seeds, powder
  • 1 tsp Butter
  • ½ tbsp All Purpose Flour
  • 1 clove Garlic

Directions

  1. Pressure cook the tomatoes (about 2 whistles is sufficient).
  2. Blend till smooth. Strain to remove seeds and peels.
  3. Heat butter in a pan, add the bayleaf, garlic (whole) and fry for a few seconds.
  4. Add tomato puree. Stir.
  5. Dissolve the flour (maida) in a little water till smooth. Add the flour paste, stirring continuously, bring to a boil.
  6. Add the seasoning, salt and sugar. Simmer for 5-7 minutes.
  7. Serve hot with bread croutons, a swirl of fresh cream, and pepper.
