Sweet Potatoes Dish

This is very unique and delicious dish made from sweet potatoes (Ratalu).

Ingredients vegetarian 4 servings


    • ½ Kg Ratalu (Sweet potatoes/Yam)
    • Oil for deep frying
    • 30 gms onion sliced
    • 100 gms Curd (Yogurt)
    • Salt to taste
    • 1 cup Ghee
    • 1 tsp Red Chili powder
    • 25 gms Garam masala powder
    • 1 tbsp Ginger paste
    • 1 tsp Coriander powder

    Directions

    1. Peel and Dice sweet potatoes into 1/2 inch cubes. Deep fry in oil. Frying should be done on low-medium heat.
    2. Meanwhile, heat oil in pan. Add sliced onions.
    3. When onions are translucent, add ginger paste. Continue frying.
    4. Add Chili powder, Coriander powder and Garam masala powder.
    5. When masala starts sticking, add water and let it simmer.
    6. Add fried sweet potatoes into masala mixture. Add Salt. Fry for 4-5 minutes.
    7. In a separate vessel, beat Yogurt and add to this mixture.
    8. Simmer for another 10 minutes.
    9. Garnish with coriander leaves

    Dear Rajiv, Ratalu is purple yam not sweet potato.Which one is used?????
