Bored with omelettes? Try this variety of eggs with healthy vegetables for your breakfast

Ingredients
- 8 Eggs
- 5 large ripe tomatoes
- 5 garlic cloves (chopped)
- 1 inch ginger (chopped)
- 1 finely chopped carrot
- 1 large onion (chopped)
- 1 Capsicum (chopped)
- 1 bunch of spinach (finely chopped)
- 2 chopped green chilly
- 1 cup chedder cheese
- 1 tsp red chilly flakes
- 1 tsp tomato sauce
- 1/2 tsp oreganao/ajwain
- 1/2 tsp black pepper crushed

Method
- Heat oil in a large-flat pan
- Saute onion and garlic till they are soggy.
- Add all the vegetable and saute for 4 to 5 minutes.
- Add chopped tomatos and fry till tomatos are soft.
- Add oregano, pepper, tomato sauce and salt,mix well and saute for two minutes.
- Now evenly spread the vegetable, and crack and pour eggs one by one,gently without beaking the egg yolk.
- Spinkle grated cheese on it.
- Sprinkle chilly flakes.
- Now close the lid and cook it on slow fire till eggs are done.
- We can also bake it in a microwave for 5 minutes.
- Eat with toast.
