This is a really healthy vegetable which is fast to cook and good to eat

Ingredients vegetarian 4 servings


    200 gms french beans 350 gms white pumpkin 50 gms fresh peas 200 gms suran 10 gms kadipatta 50 gms carrot 50 gms brinjal 4 teacups fresh curd 1/2 tsp rai 50 gms green chillies 100 gms grated coconut 10 gms mustard seeds salt to taste

    Directions

    1. Slice / cut all vegetables into half inch length size. Par Boil with salt to the extent that they do not become very soft.
    2. You could even steam the vegetables that way ensuring that they do not lose their nutrition content.
    3. Grind grated coconut with green chillies and curd to form a smooth paste. Add this to the boiled veggies. Add some more curd and mix well.
    4. Crackle mustard seeds and add kadipatta to this - pour into the vegetable mixture.
    5. Bring to boil and serve hot with rice or parathas

    For Avial another option is to use little tamarind instead of curd. Once Avial is ready season only with Curry Leaves and little coconut oil. Traditional Avial is without mustard. by Lata Mohan - Dubai

    better to beat the curd in mixer and add it seperately. also if the curd is well fermented it will taste better. add the curry leaves just before taking off from gas and then add coconut oil and no mustard seeds.
