Gujarati Kadhi

sweet and sour in taste

can be served with khichdi, pulav or plain rice

Ingredients vegetarian 2 servings


    • 1 cup sour curd
    • 2 cups water
    • 1 tbsp gram flour(besan)
    • 1/2 tsp green chilly paste
    • 1/2 tsp ginger paste
    • 1/2 tsp amba haldi paste
    • 6 curry leaves
    • 1 inch cinnamon stick
    • 3 cloves
    • 1 small bay  leaf 
    • 1 whole red chilly
    • 1/4 tsp. mustard seeds
    • 1 tsp. cumin seeds
    • 5 fenugreek seeds
    • 1 tbsp. ghee
    • 2 tbsp. sugar (less if curd is not sour)
    • salt to taste
    • 1 tbsp. chopped coriander leaves

    Directions

    1. Mix besan in beaten curd so that there are no lumps. Add water and mix properly.
    2. Add green chilly paste + ginger paste + amba haldi paste + salt + sugar
    3. Heat ghee in a sauce pan. Add fenugreek seeds + bay leaf + whole red chilly + cinnamon stick + mustard seeds + cumin seeds + cloves + curry leaves  in given order.
    4. Add curd mix and cover for 5 sec. Open and let it boil on medium flame
    5. Keep stirring otherwise besan will stick at the bottom
    6. After a boil simmer for 5 minutes
    7. Add coriander leaves and it is done
    8. Plz note Gujaratis don't use turmeric pwd in kadhi and it is thin in consistency

    Dear coolcook, Gujaratis use more sugar and more flavours.

    It doesn't seem different then the other Kadhies why is it called Gujarati?
