Ezy Chicken Biryani - A Variation

Biryani made with chicken and spices

This tasty Biryani is done with few ingredients and in 35 mins.This tasty home-made Chicken Biryani can be served with raita of ur choice or Stew or Korma or Boiled-eggs or Brinjal tamarind-masala or potato chips.

Ingredients non vegetarian 4 servings


    • 2 Cups basmati rice- cleaned well and ghee-sauted for 2 mins(with 2 tsp ghee)
    • 1 kg chicken pieces-cleaned well
    • 3 big onions- cut lengthwise
    • 1 big tomato- sliced (don't add more) 
    • 7 green chillies - slit lengthwise
    • 1 tsp ginger paste (don't add more)
    • 1 3/4  tsp garlic paste
    • 1/4 tsp turmeric powder
    • 2 cloves (don't add more)
    • 1 1/2 inch cinnamon stick- crushed
    • 4 green cardamoms
    • 1 bay leaf or brinji leaf
    • 1 1/2 cup thick coconut milk
    • 1 cup second coconut milk
    • 1 cup chopped coriander leaves
    • 3/4th cup chopped mint leaves
    • 2 tsp salt or to taste
    • 1 tbsp refined oil
    • 1/2 lemon
    • few ghee-roasted cashews

    Directions

    1. Heat oil in a kadai,saute brinji leaf,cloves,cinnamon stick and cardamoms in the oil.
    2. Add sliced onions and saute well for 4 mins.
    3. Add green chillies and saute for a min.
    4. Add ginger and garlic paste and saute well for 4 mins - till the rawness of the pastes diminishes
    5. Add the tomato pieces.Saute for a min in oil with turmeric powder.
    6. Add the chicken pieces and 1 tsp - salt to biryani masala.
    7. Add few coriander and mint leaves and Keep stirring till the chicken and the spices blend well and the oil separates(for 5-6) mins.
    8. Now add few mint and coriander leaves and keep stirring for 4 more minutes till the gravy thickens. 
    9. Now add the ghee-sauted basmati rice,1 tsp salt,both the coconut milks and few coriander and mint leaves.
    10. Pressure cook upto 1 whistle or 10 mins on low flame( without adding any water).Turn off the flame.
    11. Once it is done, sprinkle the juice of 1/2 lemon over it and toss gently so that the spices and the rice blend well.
    12. Garnish with ghee-roasted cashews on top and serve this tasty home-made Chicken Biryani with raita of ur choice and Stew or korma or boiled-eggs or Brinjal tamarind-masala or potato chips.

    Thank u Coolcook.We know its a busy world and quick recipes r needed the most.I get most of the recipes from my M-I-L,her 4 sisters,my mom,my friends and my relatives(who have inspired me a lot).Moreover,few star hotel recipes from a chef,which i got few years back.

    Hi Chris, You hav very interesting recipes . I don't know were you get all this from but this one seems to hav to many things in it, I don't mind I'd go for it if I was looking for it but you see I'm a busy person so I'd like some thing with fewer things & a quicker process. Thanks.
