Brinjal Biryani

Biryani made with Brinjals and spices

U can try this Biryani with cauliflower,ghee-sauted Paneer pieces,Mushrooms,Sweet Corn Kernels,etc,.

Ingredients vegetarian 6 servings


    • 1/2 kg brinjals(8-9 nos)- cut into bite size pieces
    • 2 cups basmati rice -washed,drained and ghee-sauted(1 tbsp ghee)
    • 2 big onions-sliced
    • 1 tomato-chopped fine
    • 1/2 cup fresh green peas-optional
    • 1 tsp ginger-garlic paste
    • 1 tsp chilli powder
    • 1 tsp south-indian biryani masala
    • 4 green chillies-slit
    • 1 cup thick coconut milk
    • 1 1/2 cup second coconut milk
    • 1 bay leaf-crushed
    • 2 green cardamom-crushed
    • 2 cloves
    • 1 cinnamon stick-crushed
    • 5 saffron strands-soaked in warm water
    • 2 tsp ghee with 1 tbsp refined oil
    • 1/2 tsp lemon juice
    • 1 1/2 tsp salt
    • few mint and coriander leaves

    Directions

    1. Take a microwave bowl.Add ghee,oil,bay leaf,cloves,cardamoms,cinnamon stick,sliced Onions and ginger-garlic paste .Mix well and Microwave this on High for 2 mins.
    2. Take the bowl out,add chopped tomatoes,chilli powder,biryani masala,green chillies,salt,few mint and coriander leaves.Mix well and microwave this on high for 3 mins.
    3. Add brinjal pieces,lemon juice and fresh green peas and mix well.Microwave this on high for 30 seconds.
    4. Transfer this to a pressure pan,add ghee sauted basmati rice,thick and second coconut milk,soaked saffron strands with water,few mint and coriander leaves and pressure cook upto 1 whistle(not more than 1 whistle).Turn off the flame.
    5. Serve this hot with Korma,raita of ur choice,etc,.
