My mom s recipe

Ingredients


  • 400 grams tender bottle gourd
  • 1 tbsp. oil + 1 tbsp. for tadka
  • 1/2 cup coriander leaves + 1 tb.sp. for garnish
  • 1/2 tsp ginger paste
  • 1/2 tsp garlic paste
  • 1 tsp. green chilli paste
  • 2 tbsp. coriander pwd
  • 1/2 tsp cumin pwd
  • 1/4 tsp. turmeric pwd
  • 1 tsp sugar(optional)
  • a pinch of soda bi carb
  • salt to taste
  • 1/2 tsp lemon juice
  • 1 tsp cumin seeds
  • few curry leaves

Directions

  1. Clean and wash coriander leaves, spread them on cloth so that excess water is removed and chop fine
  2. Mix coriander leaves + coriander pwd + turmeric pwd + cumin pwd + salt + sugar + ginger + garlic + green chlly + 1 tb.sp.oil + soda bi carb
  3. Peel bottle gourd, cut in to 1 inch round pcs and make a single slit length wise till 3/4
  4. Stuff the masala
  5. In a microwave safe bowl place it slit side down and microwave on high for 3 min uncovered
  6. Turn it add a tb.sp. of water and cook for 5 min
  7. Add the rest of the masala, give tadka with 1 tb.sp. oil + cumin seeds + curry leaves
  8. Cover with a cling stretch film and make few holes and cook again for 5 min
  9. Check it  and allow it to cook further if it is not done
  10. Add lemon juice and garnish with coriander leaves
  11. Serve with roti
  12. Please note: cooking time depends upon the size of the gourd

looks nice...I will try it soon. I usually fill the same dtuffing in bhindi and baby eggplants - the green or purple variety. -Rashmi

Plz note- use 1tb.sp. coriander pwd and for a change we can garnish with green garlic
