Pasta in saucy vegetables

crunchy and saucy!!

this crunchy pasta meal is saucy with all the goodness of vegtables.you can make it spicier according to your taste buds and also add in more of parmesan cheese which make the recipe more delicious

Ingredients vegetarian 4 servings


    • 2 cups boiled penne
    • 2 tbs tomato paste
    • 50 gms of zucchini,aubergine,capsicum,(chopped to fine pieces)
    • 1 tbsp finely chopped onions
    • 1 tsp finely chopped garlic
    • 1 1/2-2 tsp red chilli flakes
    • 2 tsps olive oil
    • 2 tsps sunflower oil
    • 1 tsp dried parsley
    • 2-3 tsps parmesan cheese
    • salt to taste

    Directions

    1. heat sunflower oil,and stir fry all the vegatbles including onions and garlic, one by one till soft by adding salt
    2. add the red chilli flakes and stir into the vegetables till it coats well into it.
    3. add the tamato sauce and cook in it till it appears like thick gravy.
    4. drizzle the parsely and turn off gas
    5. coat the boiled pasta in the olive oil and mix the vegatable sauce well together.
    6. sprinkle parmesan cheese and serve hot.
