Okra in bean curry

Ingredients vegetarian 4 servings


    • 200 gms okra
    • 1/2 cup lobia or black eyed bean
    • 1 onion large finely chopped
    • 2 tomatoes finely chopped
    • 4 tsps tamarind pulp
    • 1 tsp dhaniya powder
    • 2 tsps red chilli powder
    • 1 tsp turmeric
    • 1/2 tsp mustard seeds
    • 1/2 tsp jeera
    • 1/2 tsp fenugreek
    • 1 tsp ginger garlic paste
    • few curry leaves and coriander
    • salt to taste

    Directions

    1. soak the lobia over night and pressure cook adding a pinch of salt  just upto 1 whistle.
    2. cut the okra into 1 inch pieces and fry them in oil till they change to light brown or slightly tender
    3. heat oil, add mustard, jeera and fenugreek and curry leaves.when mustard splutters,add the ginger garlic paste.
    4. fry the onions and the tomatoes till the tomatoes are soft and add in the spice powders.
    5. cook till the raw smell leaves and add tamarind to this.allow till oil shows up and add the boiled lobia and the fried okra into it.
    6. pour water and add salt to taste.
    7. cook till gravy is thick .garnish with coriander and serve hot with rice or roti.
