Carrot Chutney- a variation

chutney made with carrot and spices

Very tasty carrot chutney , good for kids (and this tastes sweeter than the coconut chutney).

Ingredients vegetarian 4 servings


    • 1 cup grated carrot
    • gooseberry size tamarind
    • 1 tbsp grated coconut
    • 5 whole red chillies
    • 1/2 tsp mustard seeds
    • 1/2 tsp split urad dhal
    • 2 tsp chopped sambar onions
    • few curry leaves
    • 1 tbsp refined oil
    • 1 tsp salt or needed

    Directions

    1. Heat 1 tsp oil in a kadai and saute the grated carrot for 2 mins only.
    2. Allow it to cool.Grind this with 3 red chillies,tamarind,salt and grated coconut to a fine paste with little water(1/2 cup).
    3. Heat the remaining 2 tsp oil in the same kadai and saute mustard seeds,split urad dhal,chopped sambar onions and curry leaves.
    4. Add this seasoning to the ground carrot chutney.
    5. Serve this carrot chutney with Idli,Dosa etc.

    Hi Sreeanka Roy!.Sambar onions are tiny purple shallots that you get in India(mostly used in the preparation of Sambar).Hope this helps.
