Punjabi Dahi Wale Tori ki Sabzi

Tori/Ridged Gourd/ Tauri

Punjabi Tauri ki Sabzi also called as Ridged Gourd or Snake Gourd or Turai or Tori in Hindi, Jhinga in Bengali, Janhi in Oriya, gisoda in Gujarati, Beera kaya in Telugu

Ingredients vegetarian 4 servings


    • ½ kg of fresh peeled and diced Tori or one frozen tori / ridged gourd already diced and peeled
    • 1 medium chopped finely in chopper
    • 1 cup of tomato sauce or puree
    • ½ tbsp of ginger
    • ½ tsp. of garlic minced (optional)
    • ½ tbsp. of green chili minced
    • Salt to Taste
    • ½  tbsp. of turmeric powder
    • ½ tbsp of red chili powder
    • ½ cup of beaten curd/yoghurt/dahi
    • Oil

    Directions

    1. In a non stick pan add 2 tbsp of oil.
    2. Add Onions, Ginger garlic paste and let them cook for 5 minutes or until carmeliziation.
    3. Now add green chili and all dry spices
    4. Wait till the spices cook for two minutes and then add tomato sauce/puree.
    5. When the mixture is cooked for next two minutes add Tori
    6. Let it cook under closed lid for 8-12 minutes and ½ cup of water.
    7. Add dahi/curd and mix it well.
    8. Cook it for 5-8 minutes.
    9. Serve with Roti/Chapatti or white boiled rice.

    I made this dish today, and thanks to you, it turned out great. Especially the tomato puree idea is wonderful. Just one suggestion: why don't you change the 1/2 tbsp red chilli to 1 tsp red chilli. That would have been more appropriate, and do you really mean 1 tbsp turmeric?
