Peanut Cilantro chutney

Spicy chutney made with Peanuts & Coriander leaves

Ingredients vegetarian 6 servings


    • 2 cups Cilantro
    • 1 cup Peanuts (groundnuts)
    • 2 tbsp grated Coconut
    • small piece of Tamarind
    • 2 tsp Jaggery
    • 8-10 Dry Red chillies
    • 1 tbsp + 2 tsp Vegetable oil
    • 1 tsp Mustard seeds
    • a pinch of Asafoetida (hing)
    • 2 tsp Urad dal
    • 3-4 Curry leaves
    • Salt to taste

    Directions

    1. In a kadai, dry roast Peanuts & remove the skin.
    2. Heat 1 tbsp of Oil in a kadai. Add Cilantro, roasted Peanuts, dry Red chillies, Tamarind & Coconut. Fry for 2-3 mins. Remove to a plate & allow to cool completely.
    3. Grind the above mixture with Jaggery & little Water. Make a fine paste. The chutney should be slightly thick in consistency.
    4. Heat 2 tsp of Oil. Add Mustard seeds & Hing. Once the seeds crackle add Urad dal & Curry leaves. Fry till the dal turn light brown. Add it to the Chutney along with Salt. Mix well & serve with Idli, dosa, Rice Roti, steamed Rice or Punugulu.
    5. Note: Adjust chillies according to your requirement. Red chillies can be substituted with Green chillies also.
