Asparagus Tofu Rice

Ingredients vegetarian 4 servings


    • 2 cups basmati rice,cooked & cooled
    • 1 cup baby asparagus,sliced into 2 inches
    • 1 big onion,chopped
    • 2 tomatoes medium,chopped finely
    • 2 capsicum medium,chopped
    • 50 gms tofu,scrambled
    • 1/2 tsp jeera
    • 1 tsp red chilli powder
    • 1 tsp shahi paneer masala,mdh
    • water for boiling asparagus
    • Salt,to taste
    • 2 tsp Oil

    Directions

    1. Boil asparagus in enough water with 1/2 tsp salt and it brightens & becomes tender in 3 minutes.
    2. Heat oil in a kadai & splutter jeera,Saute onion till pinkish,then add tomato & after it turns glassy add capsicum.
    3. Then add red chilli powder,shahi paneer masala,crumbled tofu and asparagus.cook for 3 minutes.
    4. Add salt and mix well.
    5. Add this mixture to the rice.
    6. Tasty asparagus tofu rice is ready.

    Note:u can replace tofu with paneer,can add pepper powder and garlic or ginger garlic paste or can add dried onion rings.
