Vankkaya gojju

Ingredients vegetarian 2 servings


    • 250 g brinjal
    • 1 onion
    • 1 tomato
    • 5-6 cloves of garlic pods
    • 3-4 green chillies
    • 1/2 tsp turmeric
    • tamarind(small marble sized)
    • 1/2 tsp jeera
    • 1/2 tsp fenugreek
    • salt to taste

    for seasoning

    1 tsp mustard seeds, 1/2 tsp fenugreek, 2 whole red chillies, curry leaves

    Directions

    1. Cut the brinjal into four pieces and add all the above mentioned ingredients into a pressure cooker adding little water  and cook till 3 or 4 whistles.
    2. Remove after steam is reduced,remove water if any(retain it to use later) and mash with a wooden laddle till soft and well blended.
    3. heat oil in a kadai and season it and pour in the mashed brnijal to it and allow to boil for few minutes.
    4. add the retained water also and cook till it is thick.
    5. serve with rice or rotis.
