a tasty side dish which you are sure to enjoy!!my hubby who normally says NO to eggplant went on & on with his servings.....pick the tender eggplants to give you the real taste.
Ingredients
vegetarian 4 servings
8-10 eggplant/brinjals
1 onion
3 green chillies
few sprigs of coriander
tamarind (small marble size)
2 tsps urud dhal
1 tsp ginger garlic paste
1 tsp red chilli powder
1/2 tsp turmeric
1 tsp mustard seeds, curry leaves
salt to taste
Directions
wash and cut eggplant length wise.
fry urud dhal till golden,add onions,green chillies,tamarind and coriander in oil and grind to paste.
heat oil again and season with mustard seeds and curry leaves.
now add ginger garlic paste,turmeric and the eggplant and stir fry for few minutes adding the salt and chilli powder.
mix in the masala paste also and keep frying till the whole masala coats the vegetable and cook on simmer covering the kadai.do not add water.
keep tossing it inbetwen to ensure it doesnt stick to the bottom.cook till vegetable is tender.
