Uzhunthu Rice(Mash dhal rice)

Mash dhal cooked with rice and spices in Coconut milk

This one is popular in SouthTamil Nadu but forgotten today. This highly nutritious.Good for young people as well as elders.very taaassty too .Best combination is Paruppu thogaiyal ie. gram dhal thick chutney.

Ingredients vegetarian 4 servings


    • 2 cups boiled or raw rice
    • 3/4 cup mash dhal (split urad dhal with skin)
    • 1 tsp fenugreek seeds
    • 1/2 cup grated coconut
    • 1 tsp crushed pepper corns
    • 1 tsp cumin seeds
    • 1 tsp dry ginger powder or chopped ginger
    • 5  crushed garlic cloves
    • 1 cup coconut milk
    • 2 tsp salt
    • 2 tsp ghee
    for seasoning:
    • 1 tbsp refined oil
    • 1 tsp mustard seeds.
    • 1 tbsp chopped onions
    • 1 sprig curry leaves
    For gram dhal thogaiyal:(grind these together in a mixer)
    • 1/2 cup gram dhal(kadalai paruppu)
    • 1 cm size tamarind
    • 1 tbsp grated coconut
    • 7 red chillies
    • 1 1/2 tsp salt
    • 1 sambar onion
    • 1 tbsp water

    Directions

    1. Heat a non stick kadai and dry roast cleaned mash dhal.keep it aside.
    2. Heat oil in a pressure pan and put mustard seeds,chopped onions,curry leaves and crushed garlic cloves and saute for a min.
    3. Add fenugreek seeds,cumin seed,crushed peppercorns,dry ginger powder or chopped ginger.
    4. Add rice,roasted mash dhal,coconut milk,salt and 4 to 4 1/2 cups water .
    5. Cook upto 4 whistle and keep aside.
    6. Now add 1/2 cup grated coconut and ghee on top and serve hot with Cucumber raita and Gram Dhal thick-chutney.
