Vatral Kuzhambu

Traditional dish of Chettinad.This kuzhambu is prepared using bitter-nut vatral(dried) or manathakazhi vatral.

Ingredients vegetarian 4 servings


    • tamarind pulp - 1/2 cup
    • mustard seeds - 1/2 tsp
    • urad dhal - 1 tsp
    • pepper corns - 1/2 tsp
    • red chillies - 4 no.
    • bitter nut vatral or manathakazhi vatral(used to look like green peas) - 10-15 no.s
    • asafoetida powder - 1/2 tsp
    • rice flour - 1 tsp(mixed well in 1/2 cup warm water)
    • refined oil - 1 tbsp
    • salt - to taste
    • chopped coriander leaves - 1 tsp

    Directions

    1. Heat little oil in a kadai and fry urad dhal, crushed pepper corns,red chillies,asafoedita powder.
    2. Take this mixture out and grind to a smooth paste.
    3. Heat the remaining oil put mustard seeds , curry leaves, bitter nut vatral.
    4. Add the tamarind pulp ,salt and ground chilli paste.Bring this to boil till the tamarind aroma subsides .
    5. Add rice flour paste and remove from the fire when this kuzhambu becomes thick.
    6. Add the chopped coriander leaves.Serve hot with rice.

    Please don't forget to add water - 2 cups and bring the whole mixture to boil before adding the rice paste.
