Chicken With Dried Red Chillies

Sort of Chili Chicken....

This dish originated from Chongqing in China and has become a hot favourite with Singapore-literally Prep. time: 10 min Cooking time: 4 min

Ingredients non vegetarian 4 servings


    • 5 boneless chicken thighs, cut into 2.5cm cubes
    • 1 tsp sugar
    • 2 tsp light soy sauce
    • 1 tsp dark soy sauce
    • 1 tbsp rice wine
    • 2 tbsp oil
    • 3 cloves garlic, sliced
    • 2 slices ginger
    • 2 spring onions, cut into 4cm lengths
    • 12 dried red chillies
    • 3 tbsp water
    • 1 tsp seasme oil

    Directions

    1. Cut chicken into cubes, mix with sugar, both soy sauces and rice wine and marinate for 30 minutes.
    2. Wipe any dust off chillies with a damp paper towel. Snip chillies into 3cm lengths with scissors. Discard any loose seeds.
    3. Heat oil in a wok over high heat. When hot, add garlic, ginger and stir-fry vigorously until fragrant, about 45 seconds.
    4. Reduce heat to medium high, then add spring-onions and chillies and fry 10 seconds.
    5. Add chicken and stir-fry for 2 minutes, add water, and fry 1 minute more.
    6. Add sesame oil, stir well, and dish up. Serve hot.
