crunchy tomato salad

Easy to prepare and a wonderfully different flavour.

Ingredients vegetarian 2 servings

  • 3 nos. Tomato, large, ripe and firm
  • 1 cup Peanuts, roasted and coarse ground
  • ½ cup Coconut, freshly grated
  • ½ cup Cilantro, chopped
  • Sugar to taste
  • Salt to taste
  • 1 tbsp Lime juice

Directions

  1. Chop the tomatoes into med size pieces.
  2. Mix all the ingredients and serve.
