Fresh coriander rice

yummy, quick & nutritous rice variety

if you keep the powder handy you can impress even your sudden guests

Ingredients vegetarian 4 servings


    • 3 cups cooked rice
    • 1 cup poppy seeds
    • ½ cup bengal gram dal
    • ½ cup red chillies
    • salt as per taste
    • for seasoning:
    • 2 tbsp cashew nuts
    • 1 tbsp ghee
    • 1 cup finely chopped fresh coriander

    Directions

    1. Dry roast all the ingredients for powder except salt.
    2. Cool and grind into fine powder and add salt
    3. Cook rice (preferably basmati) with reduced water measure so that you get grains separately
    4. Pour hot rice in a container and make a depression lightly in the centre taking care not to break the rice grains
    5. Add fresh coriander in it and cover quickly with rice
    6. Cover he container with a lid and keep aside for 10 min.
    7. Meanwhile heat the ghee and fry cashew nuts till golden.
    8. Now add these  along with sufficient powder into the rice and mix well.
    9. Adjust  salt  and  seasoning
    10. Preserve excess powder in an air tight container and use when wanted. It stays intact  for 2 months also
