Surti undhiyu

This is the easy way to prepare and very tasty to eat due to all green masala.

Ingredients vegetarian 6 servings


    • 1 kg Surti papdi cleaned
    • 1/2 kg purple brinjal
    • 1/4 kg kanda
    • 1/4 kg sweet potato
    • 1/4 kg small potato
    • 3 raw banana

    For masala

    • 1 bunch of coriander and green leafy garlic
    • green chilly and ginger paste
    • 1 scraped coconut
    • sugar, salt, haldi pd, dhana jeera pd (1/2 cup), til
    • 1/4 kg oil

    For methi muthia: mix green methi leafs with besan, little oil, salt, sugar, haldi pd, green chilli ginger paste, dhanajeera pd. make small balls and deep fry in oil.

    Directions

    1. Clean small surti green papdi
    2. Cut other all vegetables into big pieces
    3. Don't cut small potatoes keep as it is. Wash it properly
    4. In a big plate mix all the masala with little oil
    5. In a pressure cooker put remaining oil, mix all the cut vegetables and papdi with masala and put in the cooker sprinkle very little water cook on medium fire.  Make two whistles.
    6. When undhiya is done put methi muthia in it.
    7. Serve

    the recipe is nice , i stay in sirraleone we dont get papadi so what should we use behalf of papdi ? and one more thing some recipe have egg but we are vegetarian so what we can use behalf of egg ? please let me know as soon as possible i have dinner at home on saturday thanks
