Luggan nu custard

A rich baked pudding served traditionally at parsi weddingas

Ingredients vegetarian 6 servings


    • 3 cups milk
    • 3 semi-heaped tbsp sugar
    • 125g white or yellow "pedas"(available from an indian sweet shop)
    • 2 eggs
    • 1/2 tsp vanill essence
    • 1 tbsp dry fruits

    Directions

    1. Boil milk, adding 1 tablespoon sugar and let it simmer, uncovered for 20 minutes.
    2. Add "pedas" and remaining sugar and cook for 5 to 10 minutes more.
    3. Take pan off fire and allow to cool by placing it in cold water.
    4. Separate eggs. Place egg whites in a deep bowl and beat with an egg-beater till stiff.
    5. Add yolks to whites and blend well.
    6. Add vanilla essence to eggs.
    7. Add cooled milk mixture to eggs and blend well.
    8. Pour mixture into a baking dish, sprinkle with dry fruits and bake in moderate oven for 45 mins or till top is nice and brown and the pudding is firm.
