Brinjal Kothsu

Chutney made of Brinjal and Tomato

It goes well with Idlis and Dosa.Highly nutricious due to its Iron Content.

Ingredients vegetarian 4 servings


    • 1/4  Kg of small Brinjal or 1 big bartha Brinjal
    • 4-5 big tomatoes
    • Green chillies as required
    • 3 Onions
    • Salt
    • oil for frying

          For Tempering, Mustard seeds and Urud Dal each 1/4 tsp.

    Directions

    1. Cut onions and fry them in the kadai with the help of 2 tsp of oil.
    2. Add tomatoes and green chillies
    3. If you have no tomatoes you can add tamarind pulp (3 tsp) instead.You can increase the brinjal content .
    4. After it is done add the brinjal cubes and fry it for 3 minutes
    5. Oil add taste to this chutney so add oil in between if you don't mind the calorie content :-))
    6. Put salt and spinkle  enough  water to make it for gravy and cover the vegetable .Do not forget to put the low flame
    7. After it is cooked Remove the contents in the plate and let it cool
    8. Grind it in the mixie
    9. Put 2 tsp of oil in the kadai and put mustard seeds and Urud dal-(Yin and Yang :-) ) after it splutters add to the brinjal paste.
    10. We can make our children eat the vegetables  in form of Chutneys-We can substitute the brinjal with Chow chow .
    11. It is a mouth watering recipe for Idlies and Dosas.
