Idli batter

basic recipee to churn out fluffy idlis

Ingredients vegetarian 4 servings


    • 3 cups parboiled rice or idli rice
    • 1 cup raw rice
    • 1 cup urad dal(preferably whole urad without skin)
    • ½ cup poha(thick or thin)
    • 1 tbsp methi seeds
    • salt to taste

    Directions

    1. soak both varieties ofrice after washing for 5 to 6 hrs preferably overnight.add methi seeds.
    2. wash urad dal and poha and soak in just enough water for 20 minutes.drain any water left after 20 minutes.
    3. grind urad dal and poha after 2hours into a fine paste.use cold water so as not to heat the mixer or grinder.
    4. grind rice seperately after soaking for 6hours and mix with urad dal batter.
    5. make sure you grind the rice to a coarse paste.
    6. add salt and mix both the batter nicely keeping the consistency thick.
    7. keep in sun for 4 to 5 hours or till its fermented.
    8. steam idlis the usual way
    9. make sure water in the idli steamer is hot before you place the idlis. dont steam the idlis for nore than 5 minutes.
    10. enjoy hot and soft idlis with chutney or sambhar or both.

    Hi Usha, I live in Egypt. Not sure if parboiled rice is available let alone idli rice. Could you please advise, if I can go ahead with regular raw egyptian rice which is round in shape or should I use only 4 cups of basmati rice. What else can I use? Will the idlis be that puffy?
